Authentic flavors of Rajasthan @ Westin Hotel, Gurgaon

The Westin hotel is fast becoming

the venue for food festivals in the capital. This month, the aromatic flavors
of Rajasthan enveloped the Seasonal Taste Restaurant that was transformed into mini Rajasthan.

A bright colorful
entrance evokes a cheerful ambiance, while the servers dressed in traditional attire
transport you to the pink city itself.

The Executive Chef combines his
passion for regional home-cooking with original fine dining twists, using
traditional spices from authentic cuisines of Rajasthan.
We began our tryst
with flavor with Daal Baati Churma – The famous dish of Rajasthani
cuisine. The Bati, a baked ball made
from flour was laden with ghee and tasted delicious with dal (lentils) and
Churma (sweet flaky dish).
The laal maas was a fiery yet delicious a mutton dish cooked in red
chillies. The garlic, onion and ghee work up their magic in the first bite. The
mutton simply melts in the mouth.
The Bhuna Murg is another specialty we loved. This dish is cooked with
a special procedure. Cooked on low flame helps in soaking in all the spices
and masala, giving it the rich and real taste to the dish. We loved the Indian
comfort vegetarian fare in the form of Rajashtani
Daal Tadka
(lentils made with fried onions, tomatoes, garlic, spices) that
reminded me of the pleasure that simple food can give.
The paneer mircha was serious comfort food. It went extremely well with missi roti and bajre ki roti.
Special mention must be made of the sangri
pulao
. The aromatic and fluffy rice has rich flavors of saffron and spices that
looked and tasted divine.
Gatta Curry is another dish my family loved. There’s something
gratifying about the flavors and texture of this dish. Garam masala adds heat and spice while the cinnamon and clove smell
heavenly. The onions and tomatoes mixed with besan (gram flour) create a succulent flavor, and the spices
elevate the dish to something special.
For dessert, the malpua was impressive, that ended the
succulent and spicy flavors of the meal on a sweet note. I left the hotel on an appreciative note and felt reverberated in the warmth and affection of the majestic pink city.
