Vollmer brothers & Sweden embassy showcase a culinary extravaganza @ The Lodhi

The Lodhi Hotel New Delhi experienced a culinary extravaganza with Chef Ebbe Vollmer of Vollmers, a two Michelin starred
restaurant in Malmo, Sweden. The Masterclass was organized by Embassy of Sweden. I
t was a visual delight to watch the maestros in action and perform a theatrical performance through their world class recipees.

An Introduction of Vollmer brothers
It is no coincidence that the Vollmer brothers ended up in
the restaurant business. Their family has been restaurateurs going back five
generations and the kitchen of their grandmother’s hostelry in Östarp served as
a kind of culinary kindergarten for both Ebbe and Mats. At an early age they
were able to not only taste the traditional delicacies of the Skåne region, but
also try their hands at cooking them, cheered on enthusiastically by their
gastronomically experimental grandmother.
It is precisely the convivial atmosphere of the hostelry in
Östarp that has etched itself irrevocably on the brothers, and which they have
carried with them over the years throughout their professional, culinary
journey. For Ebbe, his professional life also began at Grandma’s hostelry but
soon took a more international turn, in which a number of famous restaurants
and celebrity chefs were to play a vital role. After so journs at Marco Pierre
White’s Harvey’s and Gordon Ramsey’s three Michelin starred Royal Hospital
Road, Ebbe made a stopover in his home town of Malmö.
There he found the time to open his first restaurant, and
there too the idea to one day creates something of real substance together with
brother Mats was born. Mats also found him back in his home town after his own
culinary journey. A journey that had taken him to a number of renowned
restaurants including Le Sommelier and Herman in Copenhagen and his own so
journ at Gordon’s Royal Hospital Road in London.
He soon found himself helping
out in Ebbe’s newly opened restaurant. Their personal chemistry worked on a
professional level as well. Enjoying each other’s company, a good deal of
discussion ensued back and forth over the pots and pans regarding exactly what
type of restaurant and cuisine would be best suited to such an establishment.
Perhaps unsurprisingly it was those impressions from Grandma’s hostelry in
Östarp, and the food served there, that they bother turned to time and again. Straight
forward, honest, down-to-earth cooking.
Using ingredients from their own
doorstep, grown with love and care. After several more years of culinary
travels, during which Ebbe worked, among other places, as Head Chef at Jaan in
Singapore – guiding the restaurant to No.39 on S. Pellegrino’s list of the
World’s 50 Best Restaurants – the brothers converged once more in Malmö in the
summer of 2011, turning their dream of a jointly owned restaurant into a
reality.
Taking the experiences, feelings and flavors of Grandma’s hostelry as
their role-model, but with a modern touch and slightly more refined cooking
methods. Bearing in mind their highly developed competitive instincts there can
be only one goal for the brothers to be the best. Every day they hone their
methods and philosophy in order to achieve this.
Stubborn, bull-headed and
totally without compromise but always with their eyes fixed firmly on providing
their guests with the very best, with an unswerving focus on serving the food
that is closest to their own hearts.
The distinct flavors and character of
Skåne. Food prepared with the utmost care and love, using the very best local
produce Skåne has to offer. Great food! Without any fuss.
