Panjim Goes Americana Via Route 66

Xavs Norr waited four long years for just the right location for his American
diner in Goa’s capital city, and when he found it, he broke all records by
opening Route 66 in record time of 19 days.

Located in the charming
Latin Quarter neighbourhood of Fontainhas, Route 66 Smokehouse and Grill was
inspired by the famed U.S. highway that Xavs dreams of riding along someday on
his customised Harley Davidson. Having stopped at many diners during his
400-kilometer rides with other bikers in the Harley Owners Group or HOGs, he
yearned to bring this good ol’ American grill taste back home.
It wasn’t long before
patrons formed long queues following the unmistakable scent of the smoking
grill with BBQ ribs and chicken burgers wafting out of the restaurant. With
Americana favourites like the Loaded Cheeseburger, Coney Island Dog, New York
Style Cajun Chicken Pizza, Flambe Steaks, the Mud Pie and real American coffee,
it’s hard to believe you are thousands of miles away from the source.
Having enjoyed previous success
in Vagator at ‘Tin Tin’s Gastro Pub’, the gourmet chef with 22 years of
experience working across the U.S., Europe and the Middle East, knows how to
deliver an authentic cultural experience through one’s palate. His knowledge of
French, Italian, Spanish, Belgian, Lebanese, Moroccan, Japanese and Mexican
cuisines were put to good use in the eclectic world menu at Tin Tin, much like
the travels of the little comic hero.
 Like other successful
restaurateurs, Xavs Norr knows that there are other elements to deliver besides
quality food and drink, to keep customers coming back for more. The man
who has had the pleasure of feeding Hollywood celebrities and Formula One
racers alike believes, “No matter whether it’s a diner, pub or fine dining
establishment, there is a professional attitude needed to run the business and
everyone deserves to be treated like a VIP.”
 And beyond benefiting
himself, Xavs takes pride in being a responsible citizen as well. He aims
to be part of the ‘slow food movement,’ which counters the unhealthy trends of
fast food, the disappearance of local food traditions, and a dwindling interest
in what we eat as well as how our choices affect the world. Furthermore, he
walks the talk by purchasing a majority of ingredients locally, or if it’s not
possible to source products locally, seeking suppliers who have fair trade or
sustainable business ethics. Now that’s a trend we hope will spread.
