The flavor of Kashmir @ Westin Gurgaon

The Westin Gurgaon, New Delhi tantalized
my taste buds once again with its kashmiri flavors straight fom the paradise on
earth. The “Kashmiri Food Festival” from
the valley of Kashmir is a festival to witness the culinary extravaganza that
is beautifully curated by the  Renowned
Master Chef Firdous Ahmad Dar of Kashmir.

The chef takes you on a culinary
voyage to experience the authentic taste of the Kashmiri cuisine. The festival has
started from 7th September and will go on till 20th September, 2017. It promises
a delightful gastronomical journey to people love good food.
From the epicurean to those who
simply love good food, master chef, Firdous has crafted a signature menu for
everyone to indulge into the Kashmiri delicacies.
He has used authentic
ingredients and spices such as saffron, cloves, fennel, Kashmiri Gucchi, Pran
(Shallots), Kashmiri Red Chillies and many more. One of the most popular dishes
is the “Wazwan”, that is known to be a multi-course meal, its preparation is
considered a culinary Art and a point of pride in Kashmiri culture and identity.

Firdous belongs to a family which
is popularly known for their culinary art in the Kashmir cuisine. With over
four generations of expertise, the family’s forte lies in the artistic cooking

Owing to the family tradition,
Chef Firdous learnt the art of Wazwan cooking from his fore-fathers while he
finds his true inspiration in his mother’s recipes.
His best signature dishes
include Rogan Josh, Rishta, Goshtaba and Shammi kebab. He thoroughly enjoys
cooking Gucchi (morels), a rare and expensive Kashmiri ingredient that is
mostly prepared on special occasions.
This traditional feast includes
some of the best signature Kashmiri dishes like Kashmiri Dum aloo , Rogan Josh,
Haaq saag, Yakhani gosht, Touz and Goshtaba, specially  curated by the Master chef.
What impressed me the most –
 
The entrance decked with a
Kashmir style display with a musical maestro playing the santoor. His dedication
was worth noticing. I also loved the uniform of the servers that transcended us
to Kashmir. The servers washed our hands with warm water that reflected true
hospitality.
Highly recommended dishes –
 
Although there was a wide
variety of dishes, yet we relished the rajmah, baingan, saag, nadru, mutton,
halwa and meetha chaawal that is a delicacy specially prepared by his mother.
